GF Coconut Chocolate Cookies
Ingredients

1 cup almond flour

1 cup Gluten-Free Flour

¾ tsp baking powder

½ tsp baking soda

1/8 tsp salt

1 cup unsweetened shredded coconut

¼ cup coconut sugar
-
¼ cup butter
-
1 egg
-
½ tsp vanilla extract
-
¼ tsp coconut extract (optional)

¾ cup dark chocolate chips
-
1 Tbsp coconut oil
-
unsweetened shredded coconut

Directions
Preheat over to 350 and prep cookie sheet with parchment paper or silicone mat.
In a bowl mix together dry ingredients (except for the coconut- we’ll fold that in later) - set aside.
In another bowl cream together butter and coconut sugar than add the egg, and vanilla extract (coconut extract - optional).
Combine wet and dry ingredients, now fold in shredded coconut .
Knead ingredients together with your hands and roll into balls . Place on baking sheet and press down to form flat round cookies.
Place in oven and bake at 350 deg for 6 to 8 minutes.
While cookies are in the oven, combine chocolate chips and coconut oil and melt (I use a microwave for about 1-1.5 min) but if you prefer you can melt in a pan or over hot water.
Once cookies are done baking, let cool completely before dipping in chocolate and sprinkling with shredded coconut.
Put dipped cookies into the fridge to let chocolate harden.
Recipe Note
I love that these cookies are just lightly sweetened and really have a great texture with all the coconut. The chocolate give it the perfect balance and is paired to perfection with the coconut. The coconut extract (optional) will give it more coconut flavor. They are great even just with the vanilla extract- a little more subtle and the perfect match with a cup of coffee or tea!
Make sure to let cookies cool completely before dipping so they don't break.
Depending on where you live, you may want to keep these cookies in the fridge to keep the chocolate cool and hardened.
