Gluten-Free, Low Sugar, Carrot Cake Muffins
Ingredients

1 ½ cup almond flour

¼ cup coconut flour
-
¼ cup ground flax seeds
-
1 tsp baking soda
-
¼ tsp salt
-
2 tsp ground cinnamon
-
1 tsp ground nutmeg
-
½ tsp ground ginger
-
2 ripe bananas
-
4 eggs
-
½ cup unsweetened apple sauce
-
¼ cup melted coconut oil
-
1 tsp vanilla extract
-
2 cups grated carrots (packed)
-
½ cup walnuts (nut of choice/ optional)
-
½ cup cream cheese
-
½ cup vanilla Greek yogurt (low sugar or no sugar)

½ tsp vanilla extract
-
powdered sweetener of choice
(I used ½ cup powdered Swerve sweetener), but any stevia or monkfruit option would be good. Make sure to add sweetener little by little to your taste as it really depends on which type of sweetener you are using. If pure monkfruit or pure stevia you may only need a tsp or two. If it is a sweetener blend, like Swerve, you will use more like ¼ to ½ cup.
Cream Cheese Frosting
Directions
Preheat oven to 350 deg F.
Prepare cupcake pan with liners- I use silicone liners.
Chop walnuts and grate carrots - set aside.
In a bowl, mix together dry ingredients; almond flour, coconut flour, ground flax seeds, baking soda, salt, ground cinnamon, ground nutmeg, & ground ginger- set aside.
In a another bowl, mix together wet ingredients; start by peeling and mashing two bananas, then add 4 eggs & whisk. Add in unsweetened applesauce, melted coconut oil, & vanilla extract.
Combine dry ingredients to wet ingredients.
Fold in grated carrots and chopped nuts.
Spoon carrot cake batter into prepared cupcake pan. Fill the cups all the way full.
Bake at 350 deg F for approximately 25 min.
While muffins are baking, make the Cream Cheese Frosting by combining; cream cheese, vanilla Greek yogurt, vanilla extract, & powdered sweetener.
Once muffins are done baking, pull out and let cool completely before frosting.
Serve and Enjoy!
Recipe Note
Love these muffins with coffee in the morning! You can make this into a cake too, it will just take longer to bake.
