High Protein, Low Sugar, Gluten-Free Lemon Bread
Ingredients

2 cups almond flour

½ cup protein powder (I used vanilla casein, but whey or plant protein will also work

1 Tbsp baking powder

½ tsp salt

3 eggs
-
2/3 cup plain Greek yogurt

¼ cup sugar free maple syrup or sweetener of choice

¼ cup lemon juice
-
zest of 1 lemon
-
¼ cup powdered swerve ( or powdered sweetener of choice)

1 Tbsp lemon juice

Directions
Preheat oven to 325 degrees F.
Prepare loaf pan or silicone loaf mold (I use a little coconut oil to grease my silicone mold) but if you use steel or glass pan, grease with coconut oil and dust with flour, or use parchment paper liner.
Mix dry ingredients together: almond flour, protein powder, baking powder, and salt- set aside.
Grate zest an juice 1 lemon. You will need ¼ cup plus 1 Tbsp of lemon juice.
Mix together wet ingredients: start with 3 eggs & whisk, then add in Greek yogurt, sugar free maple syrup (sweetener of choice), and lemon juice (remember to keep a Tbsp for the glaze)
Combine dry ingredients to wet ingredients.
Mix in the lemon zest.
Pour batter into prepared loaf pan.
Bake on 325 deg F for 35-40 minutes.
Take out when done and let cool completely.
Remove Lemon Bread from loaf pan and top with lemon glaze.
Slice, serve, and enjoy!
Recipe Note
Do NOT over cook! Remember when baking with protein powder it is easy to overcook! This recipe should turn out moist & sweet but tart! Be sure to check on it towards the last 10 min of cook time to keep that moisture so it doesn't dry out.
