Protein Packed Gluten-Free Chocolate Chip Cookies

Directions
Preheat oven to 350 deg F.
Mix dry ingredients together: almond flour, protein powder, baking soda, & salt- set aside.
In another bowl, mix wet ingredients together: 1 egg- whisk, coconut oil, maple syrup, & vanilla extract.
Mix dry ingredients into wet ingredients. Then fold in chocolate chips.
Spoon mixture onto baking sheet with non-stick baking mat. Shape and press the cookie dough.
Put in oven and bake at 350 deg F for 7 minutes!
Once out of the oven, let cookies cool on baking sheet before transferring them to wire rack to cool completely.

Recipe Note
- Depending on what type of protein you use it will give the cookies a little bit different texture an a little different flavor. (Casein vs. whey vs. plant based- also a little different flavor from vanilla to unflavored. All work well though, experiment with which one you like best or fits your dietary needs).
- The secret to this recipe is to not overcook!! You will think they are undercooked, but once they cool, it will be the perfect consistency and texture. Still soft and chewy! Overcooking will make them hard and dry!
