Gluten-free Rich Chocolatey Raspberry Protein Muffins! Rich in fiber, antioxidants, and protein!
Ingredients

1 ½ cups almond flour

½ cup unsweetened cocoa powder

½ cup chocolate whey protein
-
½ tsp baking powder
-
½ tsp baking soda
-
¼ tsp salt
-
½ cup dark chocolate chips
-
2 eggs
-
½ cup plain Greek yogurt
-
½ cup honey or maple syrup (I used sugar-free maple syrup)

¼ cup unsweetened apple sauce
-
1 tsp vanilla extract
-
1 cup fresh raspberries
-
½ cup dark chocolate chips
-
1 Tbsp coconut oil
-
raspberries for topping (at least 12 )

Directions
Pre-heat oven to 350 deg F. Line muffin tin with silicone baking cups or parchment paper cups.
In bowl, mix together dry ingredients: add the almond flour, unsweetened cocoa powder, whey protein, baking soda, baking powder, salt.
In another larger bowl, mix wet ingredients:
add eggs and whisk, then add Greek yogurt, maple syrup , applesauce, and vanilla extract.
Pour dry ingredients to wet ingredients, and mix until just combined
Gently fold in dark chocolate chips and raspberries.
Spoon batter into prepared muffin tin filling each cup about ¾ full.
Bake in the pre-heated oven for 15 minutes- do not overcook to keep muffins moist and gooey!
Allow muffins to cool in tin before transferring to wire rack to cool completely.
Topping
Mix chocolate chips and coconut oil together, then microwave for 1 minute.
Stir melted chocolate and coconut together then pour over muffins once cooled.
Top with a raspberry or two!
