GF Protein Packed Blueberry Loaf (or Muffins)
Ingredients

1 ½ cups almond flour
-
½ cup vanilla protein powder
-
½ tsp baking soda
-
¼ tsp salt

3 eggs
-
½ cup greek yogurt (plain/ unsweetened)

¼ cup honey or maple syrup (adjust to taste)

¼ cup melted coconut oil
-
1 tsp vanilla extract
-
1 cup fresh or frozen blueberries
-
orange or lemon zest (optional) 1 Tbsp
Directions
Pre-heat oven to 350 deg F. Prepare muffin tin or loaf pan by lining with parchment paper or using silicone liners/ mold.
In a bowl mix together dry ingredients: almond flour, protein powder, baking soda, & salt- set aside.
In another larger bowl, add eggs (beat) , then add in Greek yogurt, honey or maple syrup, melted or liquid coconut oil, and vanilla extract. Mix well.
Pour dry ingredients into wet ingredients and mix until combined.
Gently fold in the blueberries and zest.
Spoon the batter into the baking cups, filling all the way full, or pour into loaf pan.
Bake in pre-heated oven for 18-20 minutes for muffins, and about 35-40 min for a loaf or until a toothpick inserted into center comes out clean. (I prefer my baked goods very moist, so I make sure to pull out early as long as center is no longer runny).
Allow to cool before transferring them to wire rack for additional cooling
Recipe Note
Healthy, gluten-free, protein packed blueberry citrus muffins/ loaf. Delicious as is, or you can always top with a light glaze or frosting like citrus cream cheese. Also wonderful hot out of the oven with a little spread of grass fed butter. Delicious and nutritious!! Enjoy!
