Gluten-Free Trail Mix Cookies. Perfectly sweet & salty!
Ingredients

⅓ cup pecans or nuts of choice
-
¼ cup pumpkin seeds or seeds of choice
-
⅓ cup dried mango or dried fruit of choice

1 cup rolled oats
-
1 cup almond flour
-
½ tsp sea salt
-
½ tsp baking soda
-
¼ cup cocoa nibs
-
4 Tbsp butter
-
1 ½ tsp vanilla extract

¼ cup natural sweetener or substitute (I used sugar-free maple syrup)
Directions
Pre-heat oven to 350 deg F.
Prep cookie sheet with silicone mat or parchment paper.
Chop nuts and fruit - set aside.
In a bowl mix together rolled oats, almond flour, baking soda, and salt - set aside.
In another bowl mix together wet ingredients; start with the eggs and whisk. Then add melted butter, sweetener (sugar-free maple syrup or alternative), and vanilla extract.
Pour dry ingredients into wet ingredients and mix together.
Now add the pecans (nuts), pumpkin seeds (seeds), mango (dried fruit) , and cocoa nibs and mix together until combined.
Spoon evenly on to cookie sheet, and bake at 350 deg F for 10 minutes.
Once you pull out of the oven, let cool on the cookie sheet before continued cooling on a cooling rack.
Serve and enjoy!
