My Best Vanilla Cake
Ingredients

1 ½ cups gluten-free flour

½ cup protein powder
-
2 ½ tsp baking powder

¼ tsp salt
-
½ cup date sugar
-
4 eggs
-
½ cup butter
-
3 Tbsp coconut oil
-
1 cup milk of choice
-
3 tsp vanilla extract
-
4-5 dates (pitted)
-
½ cup pecans (or nut of choice)

1 tsp vanila extract
-
2-4 Tbsp milk (adjust to thickness)

Directions
Preheat oven to 350 deg F and prep a baking pan. I used a bundt pan and coated with coconut oil and a dusting of GF flour.
Combine butter and date sugar until smooth, then and in eggs, coconut oil, vanilla extract and milk .
In a separate bowl, combine dry ingredients; GF flour, protein powder, baking powder, and salt.
Combine dry ingredients to wet ingredients.
Spoon/ Pour batter into baking pan then place in the oven and bake for approx 25 min.
While cake is baking, use a blender, chopper, or food processor to combine the frosting ingredients; dates, pecans, vanilla extract, & milk.
Once cake is finished, let cool completely before removing from the pan. I make sure to loosen the sides before removing to minimize breaking.
Slice, Serve, & Enjoy!
Recipe Note
This cake is super moist and full of vanilla flavor. It would be great with a little added cinnamon (or spices), or you could even add in chocolate chips, or nuts for flavor variety and texture.
Also, keep in mind dates still contain high sugar content, so although a better alternative, be sure to use in moderation! Happy Baking & Aloha from Maui! - Liz
